苦杏仁富含49.6%的脂肪和27.0%的蛋白质,不饱和脂肪酸的含量占脂肪酸总量的94.85%,17种氨基酸含量为26.72%,必需氨基酸含量为7.57%,其中苦杏仁苷又称维生素B17,在杏仁中约含3%~4%。《本草纲目》中也记载了杏仁的3大功效:“润肺也,消积食也,散滞气也“。现代医学研究,苦杏仁中维生素B17,对癌细胞有杀灭作用,可缓解癌症患者的痛苦,是抑制肿瘤生长的良药。
